Monday afternoon
We made deer.
Actually, the Oglet and I prepped deer sunday- we took 2″ thick chunks of backstrap, and wrapped them in strips of bacon, and sprinkled on a pinch of Kosher salt, on each side. Very simple.

Took three leftovers to work, and one of the women in the office whined about killing Bambi.
If I had given her a bite of one, she would have knifed me for the rest.

Oh…my…god. Must eat. I’m not a hunter — guess it’s not in my nature — but I’ve long suspected that venison tenderloin must be an amazing thing. And wrapped in bacon? Oh dear.
You wrapped them in Bacon? Is that even legal?
Danimal, good venison has the texture of fine beef, and it’s extraordinarily lean, plus the flavor is like nothing you’ve ever tasted- think prime rib with a sort of an inherent sort of smokey flavor, with undertones of roasted grains.
Bacon is part of your nutritious breakfast!
