Most comestibles are in a large portion water. Salt isn’t, but you won’t do very well on a diet of salt. Isn’t the idea of dehydrating to remove most if not all of the water? Do that and most of the volume goes bye-bye as well. If I remember correctly, that’s a feature not a bug. It seems to be the nature of the thing. Freeze drying saves most of the volume, try that. I had some freeze dried strawberries once. They were quite reminiscent of strawberries, but tended to fall to powder at the least touch.
