Da mars cheese castle aint what it used to be dere eh?
They have made it much more commerical as of 2011 and it’s much more stately than the pole barn it used to occupy but the curds are not as good nor are the prices. Still, there has tobe a plkace for the Ill Annoyed to go and pretend they experienced the Wonder of Cheeseland.
Me, I stopped at Mars Cheese only to use the ATM to get some cash to go to Bobby Nelson’s Cheese Shop, completely devoid of anyone named Wensleydale. The Curds were less than 6 hours old and they squeak like a herd of mice. The sausages and jerky were insane, and I am afraid to report that the bacon did not arrive at home.
The Bacon Cheese Curds did, though, and the Ogwife is enjoying them as I type this. By morning trhey could just be all gone.

The Norwegians have some that can be and most likely has been weaponized.
Gamelost. (Old Cheese)
My Farmor (Father’s Mother) used to bury the crock of Gamelost, wrapped in several layers of newspaper and oilcloth, in the dung heap behind the barn. The temp there was perfect and she could see if anyone had disturbed it. That would really cause trouble in the household.

But… wensleydale is a really nice cheese.
(I get my curds, when I get ’em, at the Tillamook factory, nice and squeaky fresh.)
Had some smoked provolone with black seedless raisins tonight for my evening snack. Not a world beater of a pairing, for sure, but both were quite nice in their own right.
There used to be a dairy in Claremore, Oklahoma that my Mom would visit once a month or so for curds (regular and jalapeno) and smoked cheddar.
Regular smoked cheddar has nothing on the stuff smoked over hickory wood.
Actually, it looks like Swan Brothers Dairy is still there. Whaddayaknow? Going to have to visit next time I’m back home.
Best cheese I ever ate didn’t come from Wisconsin. Grandpa’s Cheese Barn, Ashland, Ohio :)
But we get up that way more than we get up Wisconsin-way.
Bobby’s place is the best. I stopped by there years ago after Steve Dahl Mentioned it and Bobby was behind the counter. I mean, come on the guy that invented the full and half nelson!!! Hew has since passed but the landjeger is awesome.
