Stew, that is.

I pulled out some deer steaks last thursday to make fajitas, and one of the packages turned out to be mislabeled- it was actually a shank (or a pair of them)

Not so good for grilling, but great for slow cooking. A lot of connective tissue, which lends itself nicely to the crock pot.

Anyway, I made sonofabitch stew. Actually, sonofabitch stew is a specific kind of stew made predominantly from organ meats and the gut marrow of a calf, but when I was growing up it was a sort of a generic term for any kind of crap you throw together so’s you can have something to eat.

I started by slicing and braising the shanks in some olive oil until they were just browned, and threw them in the pot. I added some celery and onion, and a cup of tomato paste. I poured in a beer and let it simmer on low overnight.

In the morning I added a cup each of black eyed peas, kidney beans, and black beans I had soaked overnight. Plus some molasses and some brown sugar, and some jalapenos.

Has the consistency and appearance of a steel cut oat driven bowel movement, but it sure tastes nice. Leftovers are fine too. May have to take some cheese to throw on top of it today.
